My two favorite peanuts moved to Switzerland on Monday. I’m so excited for this new adventure and all of the good things coming to their parents, but it is hard knowing that a quick trip to PA for baby squeezing isn’t possible. It’s a good thing Auntie Al has a passport and is a pro at long plane trips, because a lot will happen in two years. An ocean might separate us, but these boys are so so loved.
Like any normal female I baked away the sadness of missing these kiddos and their mama. Peanut flour cookies for my peanuts.
Peanut Flour Chocolate Chip Cookies

Prep Time: 10 minutes
Cook Time: 13 minutes

Ingredients (18 cookies)
- 1 cup peanut flour
- 1/2 cup whole wheat flour
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/3 cup light brown sugar
- 1/3 cup sugar
- 1/4 cup vegetable oil
- 1/4 cup coconut oil
- 1 egg
- 1 tsp vanilla
- 1/3 cup mini semi-sweet chocolate chips
Instructions
Preheat oven to 375F.
Whisk sugars, oils, egg, and vanilla together in a large bowl.. Add flours, baking powder, and baking soda. Mix until well combined. The batter will be thick but should not be sticky. Fold in chocolate chips.
Line baking sheets with parchment paper. Scoop out batter into golf-ball sized and roll in your hands into a ball. Flatten on the baking sheet.
Bake for approximately 13 minutes until brown and set.
Allow to cool on the baking sheets.
Peanut flour is a bit of an obscure ingredient. It’s just ground and dehydrated peanuts, but can be hard to find. I ordered PB2 from Amazon, its pricey but a good investment if you want a low calorie (and significantly lower fat) alternative for peanut butter.

My sociology professor had her neice and nephew move to Germany, so she would read them bedtime stories on skype so that they would remain close.
